Easter Elchies House sits on a ridge above the River Spey and has been The Macallan’s spiritual home for over three centuries. In 1820, Alexander Reid rented the house from Sir Lewis Grant. As a farmer, he sowed barley in the surrounding fields and established the first licensed distillery, naming it Macallan after a fire-destroyed ancient church. During winters, Reid fermented and distilled excess grains into whisky, which he sold or shared with travelers.
Today, the Macallan Estate spans 370 acres, with 95 acres dedicated to growing Minstrel barley. Each acre produces about 2.5 tons, enough for 1,800 bottles. The distillery also sources low-nitrogen, high-starch barley from local farmers for a richer whisky. After harvesting, the barley is malted, mashed, and fermented with cultured yeast before being distilled twice in copper pot stills. This process removes impurities and enhances flavor. Following distillation, the distillers collect about 16% of the spirit for maturation, resulting in a full-bodied whisky. The Macallan Edition No. 2, a collaboration with the Roca brothers, features a lighter profile with sweet notes of vanilla, apple, and ginger, complemented by cracked black pepper, brown sugar, nutmeg, and a hint of chocolate.
