The estate now spans 370 acres, with 95 acres dedicated to Minstrel barley, yielding about 2.5 tons per acre each year—enough for 1,800 bottles. After harvesting, the barley is malted, mashed, and fermented with cultured yeast, then distilled twice in small copper pot stills that enhance flavor and minimize impurities. The distillers collect about 16% of the spirit for maturation, creating a rich and full-bodied whisky. The careful selection and crafting of sherry-seasoned casks contribute approximately 60% to the final aromas and flavors.
