After malting, the barley dries over a peat flame before milling and mashing with water sourced from the Ojira and Jingu Rivers. This water, known for its unique softness and purity, filters through the granite rocks of the Japanese Alps. Next, a unique strain of yeast ferments the grains in wooden washbacks. Hakushu Distillery boasts thousands of unique yeast strains, enhancing the fermentation process. Despite the extra cost and labor, wooden washbacks use the distillery’s location to incorporate natural lactic acid, bacteria, and microorganisms into the wash.

After fermentation, the wash distills twice in Hakushu’s copper pot stills before resting in the distillery’s warehouses. The heavy peat used to dry the barley and the whisky’s maturation in Japan’s southern Alps give Hakushu Heavily Peated a slightly briny aroma with hints of smoke and sweet citrus. The palate reveals brown sugar, black pepper, honey, and caramel, underpinned by bold peat. The finish lingers with notes of malt and sugar donuts. Only 3,000 bottles of Hakushu Heavily Peated Single Malt (2013 Release) exist, with just a handful available in the United States.
